Its great to be back on the writing platform after some weeks of silence juggling life amongst all other lol…
The children are still on school summer holidays and I know many yummy mums including myself who have taken time off work and business to go away with the family and spend sometime with the children. It’s amazing how quickly they grow as time flies so as mums, we need to take full advantage of every opportunity to spend time with them including cooking with them….yes cooking! or baking? Well cooking something simple or little with them just so they get a feel of what mummy gets up to lol
Ok, Jamaican dumplings is one simple snack you can make with the children at home.. its quick, not complicated and tasty too using….
200g Self raising flour
Dash of butter
1/2 teaspoon of salt
Measure flour and pour into a mixing bowl
Mix in the butter, salt and the water (room temperature) so that it forms a dough.
Cover it up for at least 30mins to allow it rise just a little. You also want the dough stretchy
Roll them into small dough balls… you can get the children to help, it’s fun! 🙂
Into a pan, pour in some olive oil (3 tablespoons) on low heat. You only want the oil very slightly hot, then shallow fry the dough balls stirring regularly and poke slightly with a fork to ensure even spread of heat into the dumplings..
Shallow fry until golden brown….
Ready to snack on… as my Jamaican friends will say “some ackee and saltfish to go… maybe another blog post for another day? Who knows 😀
