Hello lovely people or Ciao! As the Italians will say :). Its another weekend, Hooray!. Thanks for taking time out once again. The beautiful autumn month of August is rolling by so fast! For some of us, it will soon be back to heavy winter coats and jackets lol, while others continue to enjoy sunshine all round! *sighing* bliss. Anyway, whatever the weather, we continue to count our blessings! 🙂
Now, eating healthy has been the “in thing” for some time. We pride ourselves in eating lettuce, cucumber, sweetcorn and all those nutritious, standard homemade salads, which can be boring sometimes. I recently watched an episode of food network featuring Ina Garten . She is a connoisseur of fine cuisine, who is truly an inspiration when it comes to home cooked food and definitely one of my favourites! In this particular episode, she was making a Mediterranean salad amongst other different food.
I got inspired to try something similar but with the addition of olives, exclusion of basil, substitution of feta cheese with mozzarella cheese balls (yes cheese again lol!) and to go with a spicy stuffed grilled fish :)…. divine
Chopped Cherry Tomatoes (can also use regular sized fresh tomatoes)
Finely Chopped Onions (I chopped a very small quantity, but can vary depending on preference)
Half a ball of Mozzarella Cheese, Chopped (or can adjust quantity as desired)
1 Tbsp Olive Oil
Chopped mixed leaf salad (or lettuce if you prefer)
Chopped Parsley (very small quantity or as desired)
Pinch of salt to taste or sea salt.
For Grilled Fish
Mackerel Fish (or any fish of your choice, I reckon Salmon or Tinapa will go very well.. nice)
Chopped Red Pepper
All Purpose seasoning
Paprika (or chilli pepper)
Just before I go on to the method, I saw a video on the internet from one of the most famous chefs of all times Gordon Ramsay, giving a practical lesson on how to chop an onion (RESTAURANT STYLE in my opinion)! Very interesting…. Its amazing how he makes chopping an onion so easy when itcan be a big deal for some! I thought to share, although I am still practising the technique lol. Check it out here
Mix all the chopped salad ingredients together (cherry tomatoes, onions, mozzarella cheese, parsley), then season as required with olive oil, thyme and salt.
Moving on to the Fish….
Mix all the ingredients (red pepper, onions, rosemary, curry powder, paprika (or chilli pepper), all purpose seasoning, ground turmeric).
Season the body of the fish with little bit of curry powder, paprika and salt (or other seasoning of your choice)
Cut the cleaned fish open, and stuff with the well mixed ingredients.
Drizzle a tiny amount of olive oil, and then grill for 15-20mins @180 degrees (please ensure you monitor the temperature and adjust accordingly)
Sooo Tasty, Simple, Healthy and Quick- A joy at the dinner table! 🙂
