Hey lovely people! It’s been a hectic week in this great month of January 2014. Apologies for the break in transmission and thanks for taking time out :). I’m grateful for the gift of life, and another opportunity to make a difference in life. Believe me, its not to be taken for granted!

Now, this post is looooong overdue as it was made over the festive season last year to go with my jerky duck and chicken roast which I shared here
I got the cranberry sauce inspiration from a Caribbean friend at work. However, I did a bit of substitution based on the ingredients I had at the time.I did promise a few weeks back on the Facebook group that I would share this very simple and quick recipe ever lol
Prep time: 5 mins
A pack of cranberries
An orange (sweet and juicy)/ zest
4 tbsp. sugar
1 tbsp. ground cinnamon
1 tsp of ground coriander/ 1/2 tsp. parsley (both added in place of cloves)
Wash cranberries, pour into a pot.
Add the juice of an orange and the zest
Pour in the sugar, parsley, cinnamon and coriander.
Add a little water if orange juice is not enough and bring to boil on low heat for about 4 mins.
You will notice that the cranberries swell and start to burst, producing more liquid. At this point, crush with a fork and leave to simmer for another 5mins. Switch off heat
Allow to stand for a minute. Then transfer into a container once cool enough.
