Goededag lovely people, I want to believe the past week has been favourable as usual! The month of September is gradually coming to an end. Is it me or does it not feel like just yesterday we were welcoming September! Amazing how time flies lol
The last few weeks has been hectic! I apologise for the silence 🙂 All the same, we give thanks to God for mercies.
Well, I was at a family celebration in the beautiful city of Amsterdam, Holland. I really wanted to visit the local market, possibly share a few pictures. Unfortunately, I just could not find the time! However, I found it really interesting that almost everyone owns a bicycle! Amazing! I call it promoting eco friendliness in action, very cool *smiles*. The bicycle remains one if not the most inexpensive way to travel.
Anyway, in the spirit of celebrating cultural diversity,I came across a simple dutch baking recipe boterkoek, which from what I was told, sits between a cake and a biscuit! Hmm, very tempting. Oh yes, and for lovely readers wanting the healthier recipes, will be back on track with forthcoming posts *smiles*
- Butter (84 g)
- Sugar (40 g)
- Pinch of salt
- Flour used for cakes(100 g)
- Small amount of lemon zest (can alter quantity as desired)
- 1 tsp almond extract as a substitute to vanilla extract
- 1 egg yolk to brush
Beat the butter, sugar and a pinch of salt until light and fluffy
Then add the flour, lemon zest and almond extract.
Cover the bowl with plastic wrap and allow to rest for about 30mins.
Preheat the oven to 170 degrees C.
After resting the dough, mould the dough into a rough square shape on some already cut baking sheet (in the absence of parchment paper) with the palms of your hands. It needs to be about 1 cm thick.
Place each piece on a baking tray lined with a baking sheet (spaced apart)
Brush with the egg yolk. Bake for about 10 to 12 minutes or until the top goes slightly brown. (Please monitor closely as it burns quickly)
Remove from the oven and allow to cool on the baking sheet.
