Okkk, this recipe was inspired by my new loveee for mussels until i get tired of them hehehe. Mussels are great with anything as long as they are cooked well. A great companion with fellow and popular seafood …prawns!
I originally had the idea of make it a spicy soup but just got tempted to put in some colour by adding some already blended tomatoes and peppers giving it that kick! Amazing…..ly, it turned out to be a recipe you can take on its own like a soup or can be accompanied with your rice, potatoes or even boiled plantains! N.I.C.E
Mussels (one pack, already cleaned)
King Prawns (one pack)
Onion (1/2 – medium sized, chopped)
Tomatoes base (1/2 a tin, blended with scotch bonnet peppers)
Olive oil (2 tbsp)
Seasoning: curry powder, coriander, knorr cube (optional), garlic (grated), ginger (grated), turmeric powder and salt (all added in small quantities). Adjust as desired
Firstly, cook the blended tomatoes and peppers in a hot dry pot. This is so that the liquidy bit evaporates to forms a paste. Put to a side.
Wash the mussels and prawns
Chop some spring onions and add to the mussels and prawns.
Into a pot, heat the olive oil, add the chopped onions and garlic. Stir, then add the mussel/ prawns, the seasoning and a little bit of boiled hot water. Allow to simmer for 1 minute.
Then add the tomato/ pepper paste to the pot and stir in so that it cooks with the rest of the mix. The mussels and prawns will take in all the flavours! Smells really goood
Goes great with a glass of your favourite red wine 🙂
