Hello lovely people
Now curries are a favourite in my home. I honestly don’t know who does not like curries! Even my clients love em 🙂
A friend of mine visited and we had curry for dinner- this time with lentils. I would usually eat them in cold salads but decided to try it in curry and it tasted so good. I used my favourite veggies so you can always substitute them for your preferred options
Pack of lentils (optional)
Red bell pepper (x 1)
Orange pepper (x 1)
Broccoli (cut in small pieces)
Onions (1/2; chopped)
Spring onions (chopped)
Coconut milk (1/2 a tin)
Tomato purée (1/2 a tin)
Red chillies -chopped
Scotch bonnets (x 2 blended)
Lemon ( x 1)
HSS: (1/2 to 1tsp. Oregano, thyme, knorr seasoning, curry powder), bay leaf (x 1) grated ginger (small), grated garlic (small), chopped parsley, salt to taste
Rinse a handful of lentils in cold water. Drizzle olive oil and a little salt. Simmer for 20-25minutes until almost cooked.
Drain and leave to side
In a pan, heat up two tbsp. Olive oil and sauté chopped onions, spring onions.
Then add the broccoli, garlic, ginger and a little water. Allow to simmer for 2minutes.
Add tomato purée and the rest of the veggies (peppers before the mushrooms). Then the lentils.
(lentils are the little nut like seeds on the spoon. Now these are optional, if you can’t get them)
Season with the 1/2 to 1tsp. of HSS. Taste for flavours and allow to simmer for at least 5-8minutes
Add coconut milk and stir. Put in one bay leaf. Add the red chillies and blended scotch bonnets, drizzle lemon juice to pull out the flavours even more!
Allow to simmer for 5- 10minute, stirring and tasting regularly
Oh so yummy!
Great for children too except for the chillies and scotch bonnets- substitute with black pepper
Serve with rice, potatoes or even plantains 🙂
