Happy summer holidays! Yes we can that properly now that the schools have broken up for a well deserved summer break..
My son is officially a year 1 pupil lol. I am forever grateful to GOD for seeing him through his first steps in to “Big school” and this is wishing all our other children a successful entry in advance into “Big school”
Ok as the holidays begin, I am passionate about the time we spend with our children and how our behaviours help to shape our children’s eating habits and the family in general. With this in mind, I did a short video with a few tips and shared it with other mums on our yummy mummies food club facebook …. you can check it out here.
Now this post features a simple family chicken sauce I make in my home… simple, quick and tasty as always 🙂
1 pack of diced raw chicken breasts fillets
Some chopped fresh vegetables of Carrots and Broccoli
1 small finely chopped onion (or blended with 1 scotch bonnet)
2 tbsp. Olive oil
1 red bell pepper (finely chopped)
1 small scotch bonnet pepper (blended, optional)
HSS: 2 sprigs fresh thyme, few chopped fresh parsley (or 1/2 tsp. dried parsley), 1 clove of garlic (crushed or pureed), 1/2 tsp. tarragon, 1/2 tsp. curry powder, dash of turmeric, dash of sea salt, dash of black pepper, dash of lemon juice, chicken seasoning… (or you can make your own… please stay connected for this will feature in the next post)
Season chicken in a bowl with all the HSS mentioned and the onions. Mix together like you are marinating the chicken.
In another pan, heat the olive oil. Add the marinated chicken and the fresh vegetables. Stir for about 5-7minutes.
TIP: The vegetables will take slightly longer to cook because they were cut in slightly big chunks and would take slightly longer to cook.
Add a little water (or some liquid chicken stock). Allow to simmer for 5 minutes
Add the chopped red bell. Simmer for a further 3minutes approximately… Tasting for seasoning and adjusting accordingly
#ready… did you say that quick? ehmmm yes, that quick and so tasty too 🙂
Great for your rice, boiled potatoes, boiled plantains, noodles …….The family love it. The vegetables were fairly crunchy and tasty which is what you want to achieve. Please try the recipe and lets have your feedback! Thanks
