Buongiorno lovely people, welcome to great month of October!! It’s the weekend again! And yes, we can now start counting down to christmas, it is only about 11 weeks away, can you believe it! Better start putting christmas shopping list together, and start shopping!. Anyway, hope you had a good week as always.
I did also promise precious readers that I will put together some healthy choice meals, so recipes for the month of October will be simple, healthy and tasty YAY! It starts with a simple, healthy salad with a meaty extra, beef! Lol
Personally, I don’t tend to eat salad alone, usually like something else added whether its fish, beef or chicken. Beef is a good source of protein, providing building blocks for the body for health hormones. However, I believe all foods should be eaten in moderation in order to create that fine balance in meals :). I chose to marinate the beef overnight so as to intensify the flavours!YES!
For marinating beef;
Ground Cayenne Pepper, Mixed spices (or all purpose seasoning),
Knorr cubes (or vegetable stock cubes),
Chopped Garlic, Ground Cayenne Pepper,
Chopped Fresh Rosemary, Chopped Fresh Coriander,
Chopped Ginger, some sliced onions, 1 x scotch bonnet (pepper)- can add more to make even more fiery if desired!,
Olive oil and a bottle of red wine (does not need to be expensive red wine!).
Salt to taste.
Dried raisins (for sweetness, however, this is optional) 🙂
Thousand Island dressing (or can use any dressing of your choice)
Wash beef in some salty water to clean properly. This will lift bits of fat contained in the beef.
Place beef in a bowl, drizzle a little olive oil (this will help all the seasoning to be added to stick to the beef for that all important flavour)
Add the spices (Curry Powder, Ground Cayenne Pepper, mixed spices (or all purpose seasoning), knorr cubes (or vegetable stock cubes)
Then add the chopped ingredients (rosemary, ginger, garlic, coriander, onions, pepper
finally a little salt to taste and mix properly, preferably with your hands!
Then pour in the red wine to just above the meat
Cover with cling film and leave overnight in the fridge.
Remove marinate from fridge and cook all the ingredients (including red wine juice) in medium heat for about 1hr to slowly release the flavour. Monitor regularly and adjust heat where necessary. You should start to smell the flavours including the wine as it cooks nicely 🙂
Once cooked and tender,chop the beef into small portions, place the beef on an oven tray, and sprinkle the red wine jus (juice from meat )
Place in a pre heated oven at 170degrees for about 15-20mins or until beef is a nicely, lightly roasted (remember to monitor temperature of oven, and adjust accordingly)
Chop all salad ingredients. Mix together with dried raisins
Plate and serve with thousand island or choice dressing!
