Well, all things are still bright and beautiful until it gets unbearable and the rain comes to help cool the heat. Is God not awesome? In my last post, I mentioned that I made some canapés for a wedding a few weeks ago and oh my how quick did they go, no joke! Lol. I was discussing with some ladies at the weekend retreat and one of them had mentioned previously that it could make a good blog story. I know some people struggle with the idea of marinating chicken or beef or seafood to be able to get the intensity of the flavours, hence I thought to share some quick tips on flavours I hope you find useful
For the chicken breasts fillets skewers I made as part of the canapés fireworks 🙂 the marinating ingredients were
from left to right: Parsley, bay leaves, garlic, thyme, curry powder, olive oil, ginger, fresh basil leaves, dried coriander, fresh lemon. Others added were Knorr cubes, onions, green chillies and salt to taste. Suitable alternatives would be using fresh parsley and fresh coriander if readily available.
Wash raw ingredients including the chicken properly
Chop the basil leaves, onions, grate ginger and garlic, chop the green chillies, Crush the bay leaves.
Place your chicken in a large bowl or container, drizzle in some olive oil, then add all the ingredients mentioned above and little bit of water. You may need it for some chicken stock!
Using clean hands or with disposable gloves, mix everything together as this will help to make sure that the flavours are infused in the chicken. Mixing the ingredients in properly is vital for good marinating.
Finally, cover it up and place in the fridge at temp below 5°C for at least 48hours.
You can then do whatever you want with the chicken (boil, grill, pan fry, casserole….name it :)). Well mine had to be put in skewers…. hard work but great fun with some cool inspiring music!
