Now, on to Today’s post….. Well I promised on the Facebook group to post a recipe I tried out with the children last week which by the way was another hit! Noodles has always been one of the favourites with the children. I try to cook noodles in different ways with different textures and flavours to keep it exciting for the family and the children especially. I did a post last December using spinach and got some good feedback. You can check it out here
The ingredients are very basic and the method simple:)
Pack of Indomie noddles (or any other preferred Instant noddles)
Some fresh cauliflower -chop a few
Some courgettes (zucchini) – chop a few small pieces
Chopped sweet pepper (I used orange colours ones to add colour, you can use sweet red peppers and even green peppers)
Small grated ginger
Some leftover roasted fillet fish-shredded
Some frozen chicken stock liquid
Some soy sauce- 1 tsp
(Herbs, Spice , Seasoning used: black pepper, curry powder, pinch of salt, chicken stock, parsley, thyme- all in small quantities )
Useful Cooking Tip: Always retain stock from your cooking whether it’s beef, chicken or fish. You can store the liquid in a freezer compartment so that it remains fresh the next time you use it. It provides an added flavour in the cooking.
Put you instant noddles with a little bit of olive oil in some water and allow to cook to half way, then drain and put in a separate bowl
In another pot, heat up one teaspoon of olive oil and sauté for a few minutes onions, ginger, carrots and cauliflower, adding the seasoning mentioned in small quantities. Then add the courgettes
Add the chicken stock liquid and simmer for a few more minutes . Then add the noddles. Followed by the noddle seasoning that comes in the noddle pack. Allow to simmer again for a few minutes
Add the shredded fish, two drops of soy sauce and its readyyyy
