It’s already mid November and only a matter of weeks to Christmas! Isn’t it exciting :D. Well its been very busy in my household just as yours hence this post is coming two weeks behind schedule *covers face*, sincere apologies. I did promise on the Facebook group last Tasty Thursday that I was going to share the recipe so here goes….
Tin tomatoes (x 1)
1-2 scotch bonnets
1 red bell pepper
Vegetables- can be fresh or frozen (peas and carrots)
Semi skimmed milk (200ml)
Some grated cheese- Mild cheddar.
Olive oil (1/2 of a cooking spoon size)
(HSS- 1/2 nutmeg (grated), garlic, ginger, curry powder, sage, rosemary, thyme, parsley, Knorr cubes, salt to taste)
In a pot of cold water, place a few of the pasta sheets (in my case, I cooked four sheets), drizzle olive oil and a pinch. Bring to boil for about 10mins or until soft. Take off from heat. Allow to cool.
In another pan, prepare your mince sauce…..
In a heated pan, add your washed minced and simmer for a few minutes. Add a pinch of salt.
In the short interim, blend together- the tomatoes, scotch bonnet, bell pepper, few chopped ginger and garlic.
As the mince is cooking, pour in the blended mix. Add curry powder and the other herbs mentioned. Allow to cook for another 10mins approx..
Then add the veggies (peas and carrots or you can add your desired vegetables). Allow to simmer. Tasty and add seasonings as desired. Then put to a side. Remember, not too hot and spicy if you are cooking for the family 🙂
In another small pan, pour milk, chopped carrots, chopped red onions and grated nutmeg. Heat up for a few minute until it just starts to boil.
Take off from heat. Allow to infuse and cool
Drain off so you only have the milk sauce.
Finally, layer them in your oven dish in this order
one sheet of the pasta, then coat with the minced beef sauce and some of the milk sauce. Repeat another two times at least, layering them on top of each other. Finally, pour your grated cheese, then last bit of the milk sauce. PLEASE NOTE: Depending on the quantity of Lasagne you are making, your layers may be more 🙂
Place in a preheat oven for at least 25mins@ 200°C.
