The kids are enjoying the summer off from school, the UK is still celebrating over the birth of the royal baby George Alexander Louis who by the way was born on my birthday! Yes, I know, thanks! *smiley face*. Anyway, we go about our daily lives, for most, its business as usual, for some, more than just business as usual etc. The clock is ticking by the second! Where do we find the time to rustle up good food and do those things we love (including relaxation, ahhh peace and quiet)!
I’m at home with the kids, it’s time for lunch or just need a nice filling snack before we have that all important nap as the weather is sometimes too hot to go out. Ever felt like you don’t really know what to make aside the usual stuff lol. Well, the kids love chicken, and I had a few drumsticks in the fridge, so thought to spice it up a bit with honey! Easy and tasty! Yes!
chicken drumsticks (or wings if you prefer), chicken (or vegetable) stock, carrots, spring onions and salt to taste.
1. Boil chicken, seasoned with chicken stock, carrots, spring onions and salt
2. When chicken is tender (as desired), place them on an oven tray and glaze with honey.
3. Grill in the oven for about 15-20mins at 150 degrees (note: individual ovens operate differently, be sure to monitor the temperature of your oven) 🙂
4. Serve as desired.
5. Or garnished with some lettuce, sweet red and yellow peppers and some sour cream on top! (presents well as a nice starter at the dinner table):)
