Happy, Happy, Happy December!
Christmas is drawing to a close and a few weeks to the end of 2014. Thank you for taking time to read as always :). I continue to appreciate the positive feedback I get from my readers- THANK YOU!
Its a busy time at home and the perfect time to start getting your Christmas shopping done, well if you have not started. However, as I always say to everyone I know, don’t go over the board buying things not needed. A list always helps but sometimes, it so doesn’t- Have you been there too ?lol
I thought to share a very tasty veggie couscous I made sometime ago for the family. I have tried making couscous in the past, got it wrong and did not bother but then re-visited much later . I used up the veggies I bought from the farmers market. The children also loved the couscous and I have not stopped making it 🙂 .
Chopped courgette (x 1)
Chopped red pepper (x 1)
Chopped yellow pepper (x 1)
Small pack of couscous
Optional- Roasted beef chopped in small pieces- (alternative roasted chicken)
1/2 onion chopped
Garlic and Ginger (small quantity, chopped)
Olive oil (1 tbsp.)
[HSS : curry powder, thyme, salt to taste, black pepper, rosemary, beef stock]
In a heated pan, add the olive oil and sauté onions, garlic and ginger.
Add the peppers and the roasted beef. Allow to sauté for a couple of minutes. Then add, rosemary, black pepper, salt to taste. Allow to sizzle for a few minutes….
Add your couscous dry in to the veggies. Add a little liquid beef stock. Then add curry powder, thyme. Allow to cook for approx 15mins or till the couscous becomes soft enough
TIP: Couscous does not need as much water as regular rice to cook so the liquid beef stock should just be a small quantity.
Finally, dinner is ready! Quick, yet tasty. You can whip this up under an hour (with all the ingredients prepped). How cool is that? 🙂
