Ok, on the Facebook group I promised to share my jerky duck recipe :), yes duck not chicken 🙂 my invention lol. I did a hot jerk Jamaican marinade two days to Christmas, coated the duck, put in the fridge and just shoved it in the oven Christmas morning, simple! I could have just bought a ready-made seasoning but I decided to do mine for a change *smiles* why not?
Medium sized Duck,
Scotch Bonnet Peppers (x5),
Soy sauce (2 tbsp.),
Garlic (2 small cloves),
Half a Ginger,
Spring Onions (x4),
Olive Oil (2 tbsp.),
Brown Sugar (3 tbsp.),
Hot Curry (2 tsp),
AllSpice seasoning (1 tbsp.)
Pimento seeds (Jamaican spice)
Thyme (1 tsp.),
Parsley (1 tsp.),
whole nutmeg (x1, grated),
Half a Lime (squeezed),
Coriander (1 tsp.),
Four Bay leaves
Carrots ( for stuffing the duck)
All purpose seasoning & Salt to taste!

Clean the Duck and season the inside with all purpose seasoning and some Bay leaves. Put to a side
Blend the scotch bonnets, ginger, garlic, soy sauce, spring onions (chopped), allspice, olive oil, brown sugar, thyme, nutmeg, parsley, hot curry, squeezed lime, coriander and salt. Add a little water to make blending easier. That’s your marinade done 🙂
Marinate duck and stuff in some chopped carrots. Wrap in a freezer bag and put in the fridge to marinate for 48 hours at least for proper marinating!
A Jamaica friend of mine said his uncle adds some pimento seeds with a few bay leaves in some warm water. Leave it in a bag to infuse properly for extra spice, so that’s exactly what I did!
After two days (Christmas morning), got the duck out and placed straight into an oven at 180 degrees for about 1hr 15mins, checking occasionally and sprinkling the pimento/ bay leaf water
Juicy, hot & spicy jerky duck. It was sooooo goooood!
I used the same marinade on some chicken breast and home made cranberry sauce (will share in the new year ) *wink*
The cranberry sauce went so well with the chicken breast and a glass of fine red wine 😀
