I have been craving cheese all week and felt like almost everything I ate had to have cheese! Not sure whether it’s such a good thing to eat too much of something hmmm. Anyway, I was pushed to do a bit of research and looking on the bright side, I understand cheese is good for us 🙂 Yes, yes, Whilst we are conscious of the calories and fat contained in cheese, It’s also a fantastic diary product with essential nutrients such as calcium and protein. Very good for kids too I must add 🙂 and yes in moderation as with everything in life! loI
Cheese is of different types, I just did not realise there were lots of it! Wow! I’m already thinking of exploring the different types hmmm…..
The great combination of protein in cheese and fibre in vegetables makes a great full and healthy meal. Nice! With this in mind, I tried out my version of something similar to a pasta bake, but with vegetables….
200g Pack of Pasta (can vary depending on serving size)
Carrots, Sweet Corn and Broccoli (or mixed vegetables of your choice)
Tomato paste (alternatively left over stew in fridge!)
Mild Cheddar Cheese Slices (other alternatives: mature cheddar, mozzarella or Parmesan)
All purpose seasoning, Thyme, Basil, Pepper and Salt to taste.
Cook pasta for about 15- 20mins , then drain (TIP: Best way to cook is to put pasta in boiling water, add bit of salt, and sunflower oil so it does not stick together when cooked ).
Steam vegetables for about 5mins and drain.
In a clean pot or bowl, mix the pasta and vegetables, sprinkle some all purpose seasoning, bit of tomato paste ( or if you have some left over stew in the fridge, that should do the magic too 🙂) and some pepper.
Place in an oven dish, and lay the cheese slices on top.
Grill at 170 degrees for 15mins!
