I did a Facebook live message earlier in the week sending a Merry Christmas Message my family and friends, I mentioned that I will be doing a Facebook live video on making a festive season salad…. made it previously and it went down a treat in all cases. The salad is a combination of sweet fruits and savoury vegetables.
To make this plate of goodness, you need the leaves , sweets, savouries and dressings
Depending on how sweet you want the salad to be , you can increase the quantity of apples from 1 to 2, red grapes and dried cranberries.
If you prefer a savoury salad, then you could increase the avocado, olives and cucumber.
Keep the cherry tomatoes very little.
To make the dressing:
I blended fresh raspberries, little squeeze of fresh lemon juice, 1 tbsp. extra virgin olive oil, 1 1tbsp red wine vinegar (you can use balsamic vinegar instead) to create the vinaigrette. Add just a little water for easy blending, a dash of sea salt and its ready…
Keep the fresh lemon juice very little… you don’t want the lemons to overpower the salad
In a clean bowl, mix the:
Sweets- Chop the apples, grapes, beetroots,
Savouries- Chop the cucumber , avocado, olives, cherry tomatoes
Mix nicely in the bowl- you should already notice the salad is “wet” even without the dressing. This is because of the oils you already have in (avocado, olive oil, balsamic vinegar)..
Finally, pour some of your dressing over the salad, mix together.
Add a dash of black pepper, garnish with watercress and its ready to indulge :)… well healthy indulging!
