Its half term…yay.. Its short but for me, it is …
Permission to be have extra lie in and take things easy- yes!
Permission to not have to get the uniforms ready the night before- yes!
Permission to go slightly off routine, then get to Saturday and realise you and your home needs to get back into routine…oh yes
Whatever the half term break means to you, enjoy what is left of it because it comes and goes too quick!. Anyway, I did promise on my instagram page (TrayceesFoodFashion) earlier in the week, that I will post the recipe for the spelty cakes I made with the children… It was inspired by a video I had seen on making healthy snacks so I thought to try it but I added my touch *wink*
For these cakies.. you need
250ml spelt flour
150ml greek yoghurt
2 eggs (beaten)
A handful of strawberries (cut into small cubes) (you decide how much strawberries you want to put in) 🙂
2 Banana (mashed)(You can use more bananas for added sweetness)
2 tsp. brown sugar (alternatively, use honey)
2 tbsp. Coconut oil
11/2 tsp. baking soda
Dash of salt
Mix the eggs, greek yoghurt, coconut oil, strawberries, mashed bananas and brown sugar into a mixing bowl.
Add the spelt flour, baking soda and sea salt. Foil in the mixture to stir.
In a muffin tray, lightly grease. Then, scoop in 11/2 tbsp. of the mixture into each hole…
Bake in the oven for about 15mins at 190 degrees Celsius (yep felt like spelling it instead of the symbol) 🙂
Ready in no time!
serve with some ice cream to go…yumm
