Hello lovely people! It’s another fabulous weekend, yaaaay! My week was hectic, busy, not even sure what other word to describe it but God is good! So I’m excited about the weekend, YES I AM *big smilesss*
I had been putting off practicing more on my bakes considering I attended some useful classes *cover face* so last weekend, I thought to try making some oatmeal cookies. Why oatmeal you may ask? Well, I bought some oatmeal a few months ago especially after reading on its useful benefits including its rich fibre content which aid digestion. It also gives a slow release of energy, which means you can stay fuller for longer.
I thought to myself….,a perfect snack so I don’t get hungry quicker whilst on the weekend walk about and groceries shopping with the kids lol. Plus, I have been noticing the increasing interest with oatmeal as a great healthy snack.
Oatmeal cookies are very easy to prepare and bakes quick. So I pulled out my baking ingredients and in the process, I found some unopened almonds in a packet, so I thought to include, why not
1 cup of plain flour
1 ½ cup of raw oatmeal
110g butter (softened)
1/3 cup dark brown sugar
1/3 cup white sugar
1 tsp baking powder
1 tsp ground cinnamon
1tsp. Vanilla extract
Crushed almonds (handful)
Please note: The cup measurements are for a standard 250ml cup.
Into a mixing bowl, add the brown sugar, white sugar and butter . Mix well
Into another small bowl, mix the egg and the cinnamon
Add the egg and cinnamon mix into the sugar and butter mix and stir.
Then add the vanilla, baking powder. Mix together
Finally add the plain flour, oatmeal and crushed almonds. Mix until all combined. If you don’t have a hand mixer, a wooden spoon will do just fine (good arm workout anyway, lol)
The oatmeal mixture will be firm enough for you to shape just by taking a small quantity and using your hands , pat to form round moulds.
Place them on a baking paper and bake for about 12mins at 160degrees in a pre-heated oven. You want to ensure some browning on both sides of the cookies
