A few weeks ago I attended a lovely brunch hosted by one of the beautiful mums on the yummy mummies food club Facebook group by the name of Toks Aruoture
It was such a joy to meet and connect with other like minded ladies, at the same time enjoying a lovely breakfast and beautiful music by Salliefoyeh who released an EP, Beautiful, last year.
The theme of the bunch was on Finding Balance. The first speaker was Denise Sanderson Estcourt . She took a session on image and being able to balance your image with your style… I call it wearing the right fashion to portray the right image… very useful tips she gave indeed! It does not have to be that same little black dress all the time, it can be purple too :). Search #wearlessblack on twitter to join the move to adding more colour to our everyday lives
I took the second session sharing with the ladies some tips on finding balance with our family foods, creating variety aha #eatvariety 😀 and the positive effect home cooked food has on our children and family as a whole. It makes a huge difference to the overall development of the children and increases family interaction because of that meal time together…
The main speaker was the beautiful Angie Greaves -the lovely voice on Magic 105.4 fm 🙂 who shared some useful tips on juggling her busy life as a wife, mum, radio presenter, business woman… It was such a positive atmosphere that I thoroughly enjoyed every bit of it and already looking forward to the next brunch 🙂
I was feeling the positive energy and the lovely weather that as soon I got home, I was in the mood for something refreshing and bright! I checked out the fridge and seen the ripe tomatoes I bought from the market earlier in the week… was not part of the planned dinner for the family but then I thought, why not? 🙂 .. hence my simple seasoned grilled tomatoes 🙂
Fresh Basil leaves (few, chopped)
Fresh Parsley (few, chopped)
Red Onion (small, chopped)
(Olive oil, black pepper, all purpose seasoning)
Clean tomatoes and slice each in half.
Place on a tray and drizzle a little olive oil
Sprinkle few chopped parsley and basil, a few chopped red onions, dash of black pepper and all purpose seasoning
Place in the oven to grill for about 15 mins at 170°C
See how juicy they look
So I mashed a bit of the grilled tomatoes and had it with pasta…. I even made a simple tomato and basil soup out of it by blending the rest with a little water and chicken seasoning… that was two meals in one! Oh soooo tasty!:)
